Another favorite of mine is Paul Prudhomme. His Mom has a great restaurant in Lafayette on I49 just north of town. Guess it is still there, been 15 years since I was there.
He started the blackened redfish mania that damn near decimated the red drum fish population. This time the game & fish people got it right and saved the species. Blackened redfish is really good though.
Never saw his show, but his first cookbook is my "bible" when it comes to Cajun cooking. Like YOSC mentioned, "layering of flavors". I've tried explaining it some of the members at my work, but I think it went over their heads.
