Pastrami on the Grill

My boy Arthur is at it again. This is his first non Latin recipe. The brother has mad skills on the grill. If you are a pastrami fan, why not try to make your own rather than buy it at the store? I promise that you will not be disappointed.

Here are the step by step, picture by picture instructions of how he did it.

I've done this many times, and one suggestion I have for you (and Arthur) is to chill it as you did, but then slice the pastrami as thinly as you can while it is COLD. THEN steam the slices.

I do have a deli-slicer so it's easy for me to get paper-thin slices when the meat is cold, but it also slices better cold with an electric knife or a sharp manual knife.

Awesome. I love it. Make a winter food into a summer food. Never would have thought of it. The two day process is a killer but it looks worth it. Nice job.
