Andy Goodwin's Food Processor Pesto
Andy had the amazing ability to be able to eat something once and be able to recreate it from his memory. He also made his own glace de viande. He was a true renaissance man and my hero.

Ingredients:
2 packed cups stemless basil leaves washed and dried
2 large garlic cloves
1/2 cup shelled toasted walnuts or 1/4 cup lightly toasted pine nuts
1 1/4 cups extra virgin olive oil
1/2 cup hand grated parmesan reggiano cheese
1/2 cup hand grated romano cheese
salt to taste

Directions:
Process basil, garlic and nuts for 15 seconds. With the machine running add 1 cup oil in a slow steady stream. Add cheese. Add remaining 1/4 cup oil. Taste and correct of salt.

Substitution:
You may substitute for 1 cup basil, an additional clove of garlic and 1/2 cup flat leaf parsley.
