Gnocchi Gratin

1 big pkg of fresh Gnocci, or make your own. (Enough to fill your baking dish)
1 Cup Cheddar Cheese
1 Cup Mozzerella Buffala
1 Onion
3 cloves garlic
1 bunch silverbeet, leaves detached from stems. (or any spinach)
1/2 lb chunk of smoked bacon, cut into pieces
2 cups white wine
2 cups cream
white pepper
salt

Put lots of water to the boil. When its boiling, put in gnocchi. Remove when nearly fully cooked.

Sautee chopped onion and garlic with a little oil and the bacon. When those are nice and rendered, add the white wine, and the spinach and wilt, stirring well. Then add the cream, salt and pepper.

Mix the gnocchi and the sauce. Place in a buttered pyrex baking dish, top with cheddar and mozzarella, and bake in the oven until brown and bubbly.
