  • 16 oz Velveeta, cut into chunks
  • 1 7 oz can of diced green chiles
  • 1/4 stick butter
  • 1 small onion, finely diced
  • 1/4 cup milk
Combine all the ingredients and heat very slowly until cheese melts. If you like a thinner queso, add more milk. It's a great topper for tostados, tacos, beans, or just as a snack.

This is one of my favorite snacks, Cooksie. It's soooo good.

BTW, if you add chunks of chorizo into the queso and serve it with a stack of hot, flour tortillas and and a pitcher of margaritas - it's dinner!!!

Oh yeah, and we sometimes add Italian sausage and Ro-tel. Just depends on the mood.
