1 can diced tomatoes with garlic and olive oil
1 can diced tomatoes
1 large each: red and green pepper, chopped
1 large English cucumber, chopped
1/2 of a medium red onion, chopped
1 pt. blueberries
1 cup cold water
1/3 cup lemon juice
2 tsp. hot pepper sauce (1 or 2 seeded jalapeno,seeded and minced,i use 1 small habanero,minced finely)
1/3 cup whipped Dressing
blend all ingredients except dressing in batches in blender or food processor container.
Combine in large bowl. Add dressing; stir with wire whisk until well blended. Cover.
put in fridgeat least 1 hour to allow flavours to blend.
servethe soup cold, topped with a few blueberries, if desired.
