Chicken, Spinach and Barley soup

I thawed a turkey carcass that I had in the freezer, and made broth.

Strained the broth, and reheated it to simmer.

Added most of a package of baby spinach and let it wilt.

Added a cup of cooked barley.

Added a diced chicken breast that I had left over from a storebought rotiss chicken (I LOVE those things!)

Took for lunch for three days in a row. Loved it!

So easy!

This time, I made my regular chicken soup (with carrots, celery and egg noodles) and added some leftover spinach I had and some barley I had in the freezer.

Chock full of STUFF!
