My macaroni salad

1 lb box of dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, or white
1 tablespoon minced flat leaf parsley
1/2 cup diced vine-ripened tomato
1/4 cup of diced grilled red peppers
1/2 cup prepared mayonnaise (I use Miracle Whip)
3/4 teaspoon dry mustard or the same in prepared mustard of your choice
1-1/2 teaspoons sugar
1-1/2 tablespoons balsamic vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt plus more to taste
Freshly ground black pep

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

I always love a good macaroni salad! Thanks! I had given up on it cause mine never turned out the way I want it and none of the store stuff was any better.

I played with several recipes both with more and less in the past. This one I do now almost every time though I do add english peas to it once in a while. I've even tried it with finely diced carrots to see if I could add some more texture but didn't like it that much. I also suggest if you use Miracle Whip you might want to taste the dressing before adding sugar which I leave out. I only add the sugar with mayonnaise.
