Pineapple upside down cake!

This was my birthday cake. :mrgreen:

For topping....

1/4 cup butter, melted
2/3 cup firmly packed brown sugar
1 can pineapple chunks, drained and dried on paper towels
1/4 cup marachino cherries, finely chopped, also drained and dried
(optional, I have an odd love for cherries)

reserve some of juices from both cherries and pineapple

For Cake
1 1/2 cups AP flour
1 1/2 tsp paking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup butter
2/3 cup sugar
2 eggs
1 tsp mexican vanilla or almond extract
1/4 cup reserved pineapple juice
2 TB reserved cherry juice
milk to equal 3/4 cup liquid when added to juices

oven 350. Butter a 8 x 2 inch cake pan very well.

mix melted butter and brown sugar, spread evenly in buttered pan. arrange pineapple, sprinkle w/ cherries.

mix dry ingredients in small bowl, set aside.
Cream together butter and sugar until light and fluffy. add eggs 1 at a time, beating well in between. Add vanilla or almond.
Add some of the flour, then some milk mixture, alternating and beating well after each adddition... ending with flour.

Pour over topping, bake about 45 to 55 min until toothpick comes out clean.

Cool in pan on rack 15 min, run knife along edge, invert onto plate.

Dh loves pineapple upside down cake. This looks easier to make than my recipe. I'll have to give it a try!!! Thank you!
