" Moms Rice Pudding "

Moms Rice Pudding

[ Makes 1- 13 x 9 pan of pudding ¾” high. ]
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1 Cup Water
½ tsp. Salt
½ Cup Sugar
½ Cup Arborio Rice ( or any “small grain” rice )
Add all above in a (non stick if possible ) 4 or 5 Qt. pan, and bring to a boil.
Boil for 15 minutes stirring occasionally
Beat 2 large egg Yolks well ; ( *Save Whites aside separately )
Add 1 Cup of milk to the beaten Egg Yolks
Add Slowly to the Rice Mixture
Add 3 more Cups of Milk to the mixture…then….
Cook One Hour …on Low Heat stirring frequently; so as not to burn. ( I use a heat diffuser on the flame to avoid spot burning. )
When thick…Remove From Heat …Add 1 tsp. Vanilla flavoring …..
Mix…then Beat egg whites till Stiff Peaks occur…...
Fold the Stiff Egg Whites into the Rice Mixture Well.
Pour the final mix in a 13 x 9 glassware pan, and place in the Broiler watching very closely…until the top browns.
*It happens fast….so keep a watch on it.
I never added raisins, but some could be added the last 20 minutes of cooking the mixture.
Enjoy with whipped cream for more goodness.

I would like to try rice pudding again.

Years ago, I tried a recipe for baked rice pudding that never set up. Twice. I gave up.

But I'm ready to get back on that horse again!
