Peep's Sesame Noodles

1 (10 oz.) dry Chinese noodles (The ones I found are curly and look like Ramen Noodles - Ty Ling brand)
OR
4 (3 oz.) Top Ramen Noodles (Discard flavor/season packet)

Dressing Recipe:
1/4 C. soy sauce
2 TBSP. sesame oil (You can use all sesame oil & omit the vegetable oil. I find all sesame oil a bit strong so I go 1/2 & 1/2 with the oils.)
2 TBSP. canola oil
2 TBSP. rice (wine) vinegar
1/2 - 1 TBSP. hot chili oil (or to taste)

Garnish:
2 TBSP. sesame seeds (toasted in dry pan till golden)
1 bunch scallions/green onions finely chopped (white & green part)

Combine dressing ingredients in bottle and shake well.
Cook noodles in large pot of water about 3 - 5 minutes (careful not to overcook).
Drain noodles and put in large bowl.
Add dressing and toss well till noodles soak all the dressing up.
Add sesame seeds & green onion; toss well before serving.
You can eat at room temp or cold. They taste really good cold the next day.
