Not vegan, but is vegetarian (has cream and butter in it).
8" pie tin (glass is best)
pie crust for top and bottom (top will be cut into strips)
1 stick butter
2 medium onions, chopped
1lb sliced mushrooms
1tbsp flour
1/2 cup light cream
1tbsp sherry
salt and pepper to taste
Melt butter in skillet, add chopped onions and saute till soft. add mushrooms and cook for 5 minutes. Stir in flour and light cream, bring to a boil. Add sherry, salt, and pepper. Allow mixture to cool.
Line bottom of glass pie tin with the first crust. Pour in cooled mushroom mixture, then cover with top crust cut into strips so as to make a lattice.
Bake in oven at 450F for about 20 minutes.
