Apple/Pear Gouda Quesadillas

Apple/Pear Gouda Quesadillas
Serving Size : 4

8 flour tortillas
Cooking Spray
Dijon mustard
2 cups gouda cheese -- shredded
Walnuts -- chopped
2 green onions -- chopped
2 apples -- red or green (or pears), thinly sliced
Crisply cooked bacon -- crumbled (optional)

Preheat a large heavy frying pan on medium–high heat. Spray one side of each tortilla. Spread a thin coating of Dijon on the other side of only half of the tortillas.

Place one tortilla (oiled side down) in pan. Layer shredded cheese, walnuts, onions, apples (and bacon, if using) on top of the mustard. Place a second tortilla on top (oiled side up).

Cook until the bottom tortilla is crisp and lightly browned and the cheese has melted. Flip and cook the other side until crisp. Remove from the pan to a cutting board. Cut into quarters.

I've got everything needed for this...... as long as "Smoked" Gouda is okay .............

Go for it. You could use brie or camambert or any cheese of choice, make them on the grill, or serve as individual appetizer pizzas w/o the top tortilla. Have fun with it. :)
