the first and only time i tried to make a pizza at home i went crazy trying to get the dough to stretch. it kept contracting to almost the original shape.
only later i found out that the dough can't be right out of the fridge cold.
What a great video, guts! Thanks for posting it. I want to try his hand stretching technique because I'm pretty sure I will never be able to throw my dough in the air without disastrous results.
If more people realized that you have to let the dough tell you when it's time to work it, the pizza restaurant business would decline, seriously. It's really one of the easiest things to make, once you get the confidence to do it!
Why do you suppose they do all that air tossing anyway??
