1 pkg loin chops
1/2 c olive oil
2 T butter
----------
For dredging:
1 c flour
2 t garlic powder
2 t salt
1/2 t black pepper
1 t dry mustard
1/2 t nutmeg
----------
Mix all of the above dry ingredients in a shallow dish

In large skillet, heat oil and butter over medium/high heat.
Dredge the chops in the flour mix and set the remaining aside for gravy.

Place chops in skillet and brown 5 minutes, each side.
Remove from skillet and set aside- the drippings in the skillet will be used for the gravy.

Onion Gravy

1 thinly sliced large onion
remaining flour mix
1 c milk
salt and pepper
----------------
Reheat skillet and add onions, cooking for about 5 minutes, or until they begin to brown.
Sprinkle in the flour mix, then add milk slowly, stirring constantly until thickened.
Put chops back in skillet and simmer for 15 minutes, or until chops are tender and cooked through.

What a beautiful-looking and sounding dish, Sass!

I like the additions of the dry mustard and nutmeg to the dredging flour.

Thanks guys.
They remind me a bit of the creamy mustard pork chops I made a while back.
