Traditional Catalan Garlic Allioli Spread

A friend in Catalonia insisted I try this, so I did.
THANK YOU FRIEND!

Two to five cloves of garlic, chopped
Good olive oil
maybe 1/2 tsp lemon juice
bit of salt

Put the garlic in a mortar and pound it into a paste with the salt.
Slowly, teaspoon by teaspoon, add your oil
Between each teaspoon, emulsify the oil by grinding it into your garlic.
Add the lemon juice once you have some paste made.
Continue adding oil until it reaches the consistency you want... should be
like mayonnaise.
A few drops of Worchestershire sauce really rounds out the flavor too.
I used 4 cloves of garlic and made about half a cup or so of allioli.

If you like garlic, you will be in heaven. I used this on a steak I grilled, and on the baked potato, and even in the peas we had on the side. The leftovers got nibbled away with chips. ;)
