Last night was a fish taco with homegrown pico de gallo, low fat cheese, fat free Greek yogurt (sub for sour cream) on a low carb tortilla. Hard to believe that it was delicious and filling, but it sure was!

With fresh corn and a wilted red leaf lettuce salad.

Last night I got a shrimp and vegs tempura platter.
The picture came out sorta dark and fuzzy, so I dumped it.

Tonight I'm making beer brats, cabbage pancakes with egg/shredded cabbage mix and scallions.. and sliced tomatoes.

Today is chicken salad on white and Lay's potato chips in my lunch tote.

Angel hair pasta with Italian sausage and spinach. A very quick, 1-pot meal, in that pasta is cooked with everything else. It's a definite make again with a few tweaks. From the New Taste of Home magazine.

I will double garlic next time and add a pinch or 2 of red pepper flakes. I only used half of the spinach and used baby spinach, so put it in about a minute before I added thickener. I'll also cut the flour in half next time. BTW, I had to add more broth because it got really dry.
