I'm glad your home Jimmy. Take care of that Diabetes.
DD made lunch a day late for taco Tuesday,
but Lunch was just fine. We had fresh Jalapeno's, and
tomato's from our garden.

That looks really good. Your daughter is a great cook and really good photographer too.

You made me go look at the peach availability in east tx. I love Pittsburgh, Tx peaches...close by and usually really good. They should be available in WalMart for my next order.

DD Is treating me like a king.
I helped peel the tomato's
(from our garden) But she did
every thing else.
LASAGNA! Italian sausage mixed
w/ hamburger for the meat. Desert-
more of that Peach cobble, heated up
w/ Vanilla Ice Cream.
Ice /cream.

I enjoyed flounder fillet, green beans cooked with onions and tomato sauce.
Little baby potatoes baked with herbs and olive oil.
A chocolate dixie cup of ice cream for dessert.

Didn't realize diabetis had a effect on the body. Now I gotta watch the diet.

I have stayed on plan all week and eaten some good stuff.

Today, grilled salmon with a maple bourbon ginger glaze.
Yesterday, chicken breast with fresh mango salsa.
Tuesday, scallops with a white wine demi.
Monday, pinchos morunos, spicy Spanish pork tenderloin nuggets.
Sunday, grilled shrimp skewers.

Lots of salads and fresh veggies on the side.

Sass, I'm glad you finally got that steak, but I'm eyeballing the chicken thighs. Gotta save that recipe.

Lee, I wish I were as good on the grill as you are. You can make a whole meal on it. I'm lucky to do one dish at a time successfully.

Jimmy, only you could love hospital food! Hope you're feeling better. Watch those carbs!

Not sure what dinner will be tonight. I need to go food shopping. I have an eye round roast and a pork roast in freezer. BUT I wanted to wait to see if the A/C was really fixed before thawing a roast out. I had to throw away all the perishable produce I couldn't cook during the 3+ week heat wave. I found some new recipes I was excited to try so maybe Sunday will be the day to shop and try the new recipes.

This is based on a recipe from our one time member Deelady.
It's sliced brats in a grainy mustard, beer and bbq sauce.
Last few times I made it, I served it over rice.
Figured I'd try mash this time.
It's delicious.

We had rotisserie chicken, sour cream & chive mashed potatoes and mushrooms sautéed in butter with salt, pepper and Maggi Sauce.

Beef tenderloin chunks and mushrooms in a bordelaise sauce. Served with honeyed carrots and steamed Brussels sprouts. I left mine just lightly coated in the sauce so I didn't run up the calories!

Had a hankering for a fish taco and I found the BEST battered frozen haddock filets that I have ever had! Huge, crispy, delicious and on sale!! 270 calories per filet.

Served on a whole wheat tortilla with lettuce, light Ranch dressing, homemade pico de gaillo (sp?) with my garden vegs. And sliced garden tomato. And English cuke.

So good!
