Peep's Jalapeno Bagels (bread machine version)
1 ¼ cups of warm water (105°F - 115°F)
3 ½ cups flour (will need extra for kneading)
1 ½ TBSP of sugar
1 ½ teaspoons of salt
2 tsp of active dry yeast
1/2 cup chopped jalapeno peppers
Place the ingredients in the bread machine in the order listed above. Select dough setting.
Preheat oven to 425ºF.
When dough is done divide into 8 pieces. Shape each piece into a ball.
Coat 2 fingers in flour and press your fingers into the center of each dough ball and stretch to make a hole. Place on a lightly oiled cookie sheet. Repeat with the remaining dough balls. Allow formed bagels to rest covered with damp kitchen towel for 10 minutes.
Bring a large pot of water to a boil. Reduce to simmer. Use a slotted spoon or "spider" to lower the bagels into the water. Boil 2 - 4 at a time without crowding pot. Let them boil for 1 minute and then flip them over to boil for another minute. NOTE: If you like chewy bagels like I do boil 2 minutes on each side.
Place boiled bagels onto a lightly oiled baking sheet.
Bake for 20 minutes or until golden brown.
Cool on a wire rack
