What are your favorite ways to use Wraps or Tortillas? What are your favorite fillings? Show us your favorite way to use wraps and tortillas from sandwich wraps to burritos to enchiladas or tacos etc.

Or do you make chips and serve with dip?

What sauce and cheese did you use on top? Both look perfect!

Spinach, garlic and pesto wrap (burrito size) stuffed with smoked ham salad (Hormel brand canned smoked ham flaked with mayo, celery, green onion (scallion), red and green bell pepper, chopped dried cherries, dried cranberries and a very small amount of chopped slivered almonds salt and ground peppercorns). Spread wrap with fruit sauce (apricot preserves, orange juice, champagne vinegar, dried cherries, dried cranberries and dried pineapple plus fine grinds of EACH red pepper flakes, cinnamon and sea salt, cooked, pureed and cooled) add salad and baby spinach or baby wild salad greens serve with dried fruits and nuts.

My version is based on Barb's recipe >>> Beef Enchiladas

My changes:

I add refried beans and green onions to the filling.

I also added green onion to the top along with the black olives when baking.
 
Burrito size tortillas
Equal amounts of red and green bell pepper, chopped
Onion, chopped
Italian sausage out of casing
Ground sea salt
Ground peppercorns
Eggs scrambled, seasoned and cooked to desired doneness (I like mine soft and fluffy)
Shredded cheddar
Taco sauce or piquante sauce
Hot sauce - optional

Sauté and crumble sausage till fully cooked then add peppers and onion and cook till soft.
Season with sea salt and peppercorns.
Fill while ingredients are hot: Eggs, sausage mixture, cheese, taco sauce and hot sauce.
Roll and serve hot.

Peep, your wraps ALL look wonderful!

I'm inspired to try one of those in weeks to come, when my part-time roommate is here.

I recently spent four days in Provincetown, MA (one of my favorite vacation spots) and went to Betsy's by the Bay for the first time for breakfast.

Had a great breakfast wrap: bacon, scrambled eggs, spinach and brie. Delicious, but VERY filling. I should have only eaten half of it. But nooooooooooooo......

LOL!

As much as I love homemade tortillas, they are so cheap at Aldi's that I used to buy 10-15 packs a month and use them for all sorts of things. Enchiladas, breakfast burritos, tacos, casseroles, peanut butter and jelly roll-ups, sandwich wraps, whatever....everything.

Here's one of my favorite ways to "play" with tortillas, though. Pizza:

I don't always make them into faces. Sometimes, I'll make the pizzas plain and then give the kids a small stack of pepperonis or various other toppings to make their own designs. Maybe not always the most nutritious, but definitely a quick, easy lunch.

Tri-tip wrapped in a low carb tortilla with grilled cabbage, black beans and mango salsa with a red jalapeno. Instead of sour cream I opened an un-shaken can of coconut milk, scooped all the goodness off the top and added in lime zest.

toasted sesame oil
hot sauce (I used Frank's)
ground Pepper

You need to use a blender or stick blender to mix this one
