CORN WAFFLES
1 1/8 c. sifted flour
1 tsp. salt
2 tsp. baking powder
1/8 tsp. white pepper
2 eggs
1/2 c. milk
2 c. sweet corn, fresh-cut off the cob
4 TBL melted butter or margarine
Heat the waffle iron;
sift all dry ingredients together.
Beat the eggs well and combine with the milk, then add to the dry ingredients, beating until smooth.
Drain the corn and add to the mixture then stir in the cooled butter or margarine.
Pour the batter into the hot iron, to about 2/3 full (about 1 tablespoon of batter in each compartment will do this).
Cover and bake 3 to 5 minutes, until waffles are golden brown.
