You could make sausage and cornbread dressing. Crumble the muffins and cooked sausages into a large mixing bowl. Toast one slice of white bread until it's dried out enough to crumble and add to muffin mixture. Saute some chopped onion, chopped celery, and chopped green onion in butter until the onion is opaque. Mix the saute mixture and the corn muffin mixture. Season with poultry seasoning and black pepper. Add chicken stock to mixure, a little at a time, to the consistency that you like stuffing/dressing. Taste and add salt and more poultry seasoning if necessary. Stick it in the oven for a little while.

Since you're way up there, you probably had bread stuffing for Tgiving. If so, you need to try some good ol' cornbread dressing :).

Well, I decided to make the "Brunch Eggs" breakfast casserole (link in the original post) just cut the recipe in half, using sliced corn muffins and sliced sausages.

It was very good, but not nearly as cheesy as the original recipe for some reason.
