Breading Question?

I alway go with flour, then eggs then a comination of breadcrumbs & cornmeal. Is there a ratio of breadcrumbs/cornmeal I should be using? I just eyeball it and it comes out OK, but always different. Do you guys have a method for breading?

I think whatever you're happy with would be fine. I just use breadcrumbs or Panko crumbs, but have not used cornmeal. It does sound tasty, though.

If I finish with bread crumbs and something else in combination then I usually go about 50/50 but rarely measure either. A good example would be coconut shrimp where the final breading is panko and coconut which is close to 50/50 every time.

I guess I was close to 50/50 but I am thinking its a little too crunchy. Maybe I should bring it down to 1/3 CM - 2/3 BC.

Crunchiness could be a cause by the bread crumbs used too. For example panko will give a crispier finish than say regular bread crumbs in most cases. Panko though soft and flaky finish more more like a cracker, corn flake finish will.
