Potsticker Lettuce Wraps

Here's an appetizer I adapted from Ling Ling's for a quick party nibble You wrap or place each potsticker in/on the lettuce leaf(s), sprinkle with shredded lettuce, carrots, green onions, chopped peanuts, & add a drizzle of Asian dressing.

Potstickers - flavor of choice
Romaine lettuce -- curly green, or iceberg lettuce, washed, cored, drained
green onions -- thinly sliced
carrot -- julienned or coarsely shredded
fresh mint leaves -- thinly sliced - optional
Salted peanuts -- chopped
Asian dressing

Prepare/cook potstickers.

Remove large outer leaves from the heads of lettuce; trim long leaves to a 6" length. Thinly slice remaining small inner leaves & shred.

Add green onions, carrot, mint, and peanuts to shredded lettuce. Add just enough dressing to flavor and moisten lettuce mixture; toss gently.

Place some of the shredded lettuce mixture and a potstickers on top of a lettuce leaf. Add additional dressing, if desired. Eat like a taco.
