Posole with leftover pulled pork

This is SO easy and so good! Had it tonight with leftover barbecued pork from last weekend.

Posole

1 1/2 pounds pulled pork
2 T. oil
1/2 cup diced onion
2 cloves minced garlic
4 cups chicken broth (preferably unsalted, if you've used a rub on the pork)
1/4 teaspoon cumin
1 teas oregano
28 oz can white hominy, drained
4 oz can green chiles

Saute garlic and onion in large pot.
Add pulled pork. Stir in chicken broth, oregano, and cumin. Bring to boiling, then reduce to simmer for 30 minutes.
Add hominy and green chiles, and simmer for 30 more minutes.

Garnish with toppings of shredded cheese, chopped cilantro (or parsley), diced avocado, green onions, crushed tortilla chips.

Wow, that looks so good! Are those white chunks the hominy? Lisa loves hominy.....I just can't eat it (I'm weird). What do you think about subbing in some diced potatoes instead?

Yep, K, the white chunks are hominy. They have a similar texture to potatoes, and like potatoes, don't have too much flavor on their own. Simmering the last 30 minutes allows the hominy to plump up more and take on the flavor of the stew.

Sure, you could sub potato chunks, but put them in raw before simmering the last 30 minutes.

Well, I had to look up posole and hominy, but I can see me making this.

Oh, BTW, as you can see, my version is verrrrrrrrrrrrry mild.

Most posole recipes have jalapenos and cayenne in them, but QBro wouldn't let me mince up even one jalapeno for this! LOL!

I used this easy recipe again last week, but used a leftover roasted pork tenderloin.

Quick to make and delicious!
