Thhhat sure does look good Sass.
To be just a simple folk here, would you believe, I have never had an hard boiled egg salad like you show here! Yes, we ate boiled eggs a bite at the time; with salt, and usually at Easter time; but never in a salad like that.
In potato salad and mac salad, id the only way we ate hard eggs, but chopped.

This filet is the one that came home at first, with the first one I did.......... nothing like the second one, that bled out so badly during the defrosting......
This one did not bleed out at all.... just as nice as when I brought it home..........Very Moist and tender........... I may never get around the the one that's left.......... maybe by the time I got back to buy the second two, the tenderloin was just old .??
Anyway..... great dinner !
Filet Mignon, Pan=-seared and finished in a hot oven, Steamed Green Beans w/ Mozzarella, Nuked baby spuds, Broccoli-Cauliflower Salad, and a rarity at my table, a glass of Cabernet.......

Looks like exploded chicken.
You know what, No one wanted to cut up the bird, so DD said, stick it in the middle of the counter, and everyone can pick at it. Like a pack of Hyenas in the Serengeti .....
 I voted for that!

We had mashed potatoes, corn and gravy. :corn:

Dinner last night was homemade pizza. Margherita for me. New Orleans for Craig, which is crawfish, andouille, roasted red bell, red onion, Fontina and moz, plus a sweet/sour/spicy apricot preserves drizzle. We also have a red-headed stepchild pizza of half regular Margherita with the other half using rest of roasted red bell instead of tomatoes. Nobody got to that 1 yet. Breakfast!

Jimmy, you kill me lol
(Pack of hyenas)

I've been busy all morning getting much done with the move.
My furniture that was supposed to arrive today won't be here until Thursday, so I'll be playing campout on the new carpet until then.
The bathroom is done and decorated, so is the kitchen for the most part.

Dinner tonight will be some sort of takeout I'm sure.
I've still got to fill the fridge/freezer and cupboards after a grocery shopping trip later this evening.
Whew!

I threw the chips in the oven @450* for a few minutes, throw a light layer of marble jack on them to melt a bit and then I put a taco meat/bean dip mix on that. Top with more cheese and back in the oven for 7 minutes. Then topped with chopped tomatoes, taco sauce, black olives, jalapeño pepper slices, lettuce and cilantro when I have it. Then sour cream on top. Might try some corn next time.

Sass.... I hope and pray you took some time off from work to get moved in, and settled in place. Then maybe a day to just unwind a little.
God Bless. Enjoy your new place.

An old standby that I haven't made in a while. Duck breast with a port wine and cherry gastrigue, pureed parsnips, and salad.

Thanks Peeps.
Here's my teensy kitchen.
I'll share other pics in the future when it's all done.
I'm taking a BLT salad or wrap with me to work.
I did a little grocery shopping last night.
I expect I'll be busy for the rest of the month.

Peeps, white clam linguine is one of my favorite things. Yours looks great.

We had shrimp egg foo Yung.

I used silicone egg rings to keep them contained. I was able to put 6 of the rings on the griddle and make them all in one batch.

Thank you SS.

Your dinner looks wonderful. Good idea with the rings. So you cut out the oil frying all together?

Egg Foo Young is my favorite. I can not afford purchase it any more from the Chinese restaurants. ($9.99) So I did learn how to make it for a huge savings. I usually make asparagus beef at the same time. (When asparagus is on sale LOL).
