stuffed spinach balls

Little bite-sized balls of spinach, parmesan, and stuffing.

1 3/4 cups stuffing mix (I used Stove Top - the Herb flavor)
2 (10-ounce) packages frozen, chopped spinach, thawed and well-drained
1 medium onion, finely chopped
2 large eggs, beaten
3/4 cup butter, melted
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon thyme
1/2 teaspoon pepper

Preheat oven to 350*F.

Lightly grease a baking sheet.

Combine all ingredients.

Form mixture into walnut-sized balls.

Place balls on prepared baking sheet. Bake for 20 to 25 minutes.

Serve warm or room temperature.

Sprinkle with extra parmesan, if you wish.

I don't know about Bam, but we serve them as appetizers at parties, cook-outs, whatever. They're also good served with marinara sauce to dip in.

sometimes we just have appetizers as a whole meal..i make a bunch of different ones and that is the meal
