Pork Fried Rice

I think Qsis posted one uhhhhhhh....... somewhere else once.
I can't find it.
I have some leftover ribs that feel the need to be turned into rice.

I wish I remembered where I put my fried rice recipe Suzi. It was wonderful and I think BBQ'd ribs would make it even better.

I'll have to try Qsis's recipe too, if it can be found.

Here is how I make mine and all amounts can be changed or added too.

Fried rice

6 cups cold cooked white rice *
2 eggs
1/2c slivered country-style ham, diced Chinese sausage or meat off the leftover ribs
4 scallions, green and white parts, cut in 1/2 inch lengths
1/2c frozen peas, thawed and drained
* grated carrots, bean sprouts ect can be added easily as well.
The following is all to taste:
soy sauce
sesame oil
oyster sauce
peanut oil or canola oil

Beat the eggs with 1 tsp each soy sauce and sesame oil. Heat 1/2TB oil in a wok, swirling to coat the sides. Add the eggs and swirl to form a "pancake" that is 8-10 inches in diameter. When set, remove to a plate. Wipe out the wok and heat another 1/2 TB of oil. Stir fry the ham or sausage for 30 seconds or so, then remove. Add 4 TB oil to the wok and heat over medium heat. Add the rice and stir continuously, breaking up clumps and exposing all the rice to the hot oil. This will take about 5 minutes. Add the peas and scallions and stir fry for another couple of minutes. Add the ham, eggs, and 2TB each soy sauce and oyster sauce, and stir thoroughly, breaking up the eggs. Check for salt and serve.

* For best results the rice should have been refrigerated overnight.
* If three cups of less use one egg etc.

I actually made some rice yesterday based on this recipe which I've been using for a long time now. I actually on used two cups of cooked rice as it was just my wife and I.

4 cups cooked should be enough for 2 adults, 1 medium sized growing 9 year old that will eat anything, and 2 tiny people that refuse to eat, right?

Oven-Fried Rice
½ cup oil
3 onions, chopped
1 can bean sprouts
1 lb hamburger (optional)
1 tsp sugar
1 small can chicken broth
1 can mushrooms
2 cups UNCOOKED rice
¼ cup soy sauce
Garnishes:
Green onions
Scrambled eggs

Optional: cooked cubed pork or chicken, shrimp, pea pods, water chestnuts, bamboo shoots
In hot oil, sauté onions till light brown. Add hamburger and brown. Lee’s note: I don’t add hamburger, and I don’t pre-cook the onions) Mix together all other ingredients except rice (do not cook the other ingredients).
Put everything in a 13 x 9 inch pan and mix thoroughly. Cover with foil and cook for one hour at 350, stirring every 15 minutes.
Mix in chopped green onions and scrambled eggs just before serving

I made some fried rice the other night, using a technique mostly like joec's.

When I'd cooked the rice, I cooled it and then added a little soy sauce and sesame oil to it. This keeps the grains separate.

Then I did pretty much what Joe does, with onions, bean sprouts, radishes, leftover pork strips, eggs, and green onions.

FANTASTIC!

Served with roasted baby bok choy.

I just saw this post. I was going to post my recipe up, but thankfully, Lily already linked my recipe to this post.

I've been meaning to make a good amount of red-roast pork, dice and freeze it, and use that for some rice.

We are making up a roast pork tonight or as it is called Char siu or yakibuta - Chinese style roast pork. Now I don't add the red dye however I use this recipe and like it a lot. I will put some aside for fried rice tomorrow night as we always have some left over. Here is the recipe I use though I use the Chinese 5 spice substitute given as an option at the bottom. We got a couple of real nice 1.5 lb roast at our local butchers this week.

Lee's Latest Pork Fried Rice

2 cups cooked white rice, cooled and tossed with few drops of veg oil and soy sauce

1/2 medium yellow onion, chopped
handful of bean sprouts or peas or whatever you want
2 eggs, beaten
veg oil
soy sauce
sesame oil
green onions, chopped, for garnish

To nuke the rice: put 1 cup long grain white rice into a large Tupperware container, with 2 cups water and 1/2 teas. salt. Do not cover! Nuke on high power for 5 minutes, then medium power (50%) for 11.5 minutes. Fluff and cool a bit. Sprinkle a few drops of veg oil (NOT olive oil!) and a few drops of soy sauce on the rice and toss to coat each grain.

Heat 2 T veg oil in wok and stir fry onions, bean sprouts, and cubed pork, just a few minutes. Add rice and stir fry till heated through.

Push the rice mixture to the sides of wok, making a hole in the middle. Pour in the beaten eggs and slightly cook the eggs in the bottom of the wok. Mix the cooked eggs in with the rest of the mixture.

Note: Of course, you can scramble the eggs separately, or, as Joe does, cook them in the wok or pan first, then take them out.

Add a little more soy sauce and sesame oil, to taste, and mix.

Top with green onions (I didn't have any for this picture) and serve.

BEST I've done yet!!!

This time I used leftover roast pork shoulder. I cut the meat off the bone and slathered it with Ah-So Sauce. Roasted it at 350 for just a half hour.

Cubed it up and made fried rice. LOVE this stuff! Love the Ah-So and this version of fried rice!

Here's what was originally going to be pork fried rice, but it ended up becoming lobster sauce instead, which I had over rice. :eating2:
