Ingredients:​


Chicken breast - 1/3 to 1/2 lb, cut into bite-sized pieces
Grated ginger root, 1 t
Sherry, 1 T
Low sodium soy sauce, 1 T​


Maifun Rice Sticks, 2 ozs +/-​


Peanut oil
Mushrooms - sliced​


Oyster sauce, 1 T
Low Sodium soy sauce, 1 T​


Taylor Farms Asian Chopped Salad (10.5 oz size) or Marketside Asian Chopped Salad, 1/2 pkt vegetables and 1/2 of the dressing pkt​


Method:​


Marinate the chicken breast in the ginger, sherry and soy sauce for 30 minutes to an hour (in the refrigerator).​


Place the rice sticks into boiling water. Lift and separate the noodles with a pasta server or chopsticks or two forks. Cook until no longer hard, rinse, drain well in a colander, and set aside.​


Stir fry the mushrooms in a little peanut oil and set to the side. Add a little more peanut oil if necessary and stir fry the chicken until done. Reduce the heat and add the mushrooms and the noodles. Season the noodles with the additional soy sauce and the oyster sauce. Stir well to combine and add in the chopped vegetables. Season with the 1/2 pkt of the dressing. Stir to combine and cook until the vegetables are cooked to your liking.​


Yield: About 2 normal servings or 1 hungry man serving​
