Wonton Soup from scratch

This soup may take a bit of time but it is well worth the effort.

3 Shiitake Mushrooms
1/3 cup Ground Pork
1/3 cup Ground Chicken
1/2 teaspoon salt
4 teaspoons soy sauce
1 teaspoon Sesame Oil
5 Green Onions, thinly sliced
1 teaspoon Grated Ginger
1 tablespoon finely chopped Water Chestnuts
24 Wonton Wrappers
4 cups Chicken Stock

Remove stems from mushrooms, chop caps finely.

Thoroughly combine mushrooms, pork, chicken, salt, 2 teaspoons of soy sauce, sesame oil. 1/2 the green onion, ginger and water chestnuts.

Using one wrapper at a time (cover remainder with clean, damp kitchen towel). Place a level teaspoonful of mixture on each wrapper.

Moisten edges of wrapper; bring sides up to form a pouch. Place on a plate dusted with flour.

Cook wontons in batches in large pan of rapidly boiling water 4-5 minutes: remove, drain.

Boil stock and remaining soy sauce in another pan. Place won tons in bowls. Garnish with remaining green onions, pour in hot stock. Serve.
