Glazed Maple Chicken w/ Caramelized Pears

8 boneless skinless chicken thighs
1 tbl oil
1 diced onion
2 firm pears, cored & thinly sliced
3 tbl maple syrup
1 tbl soy sauce
chopped fresh chives

in a large cast iron frying pan heated over medium heat, add oil and saute chicken for 4-5 minutes. turn the chicken over and stir the onions into the pan and continue to cook for another 4-5 minutes until both sides of the chicken and onions are lightly browned.

add the pear slices and continue cooking for 3 more minutes until the pears are caramelized, stirring occassionally so it browns evenly.

stir in the maple syrup and soy sauce, bring to a boil. cover and reduce heat and simmer for 8-10 minutes or until the chicken is fully cooked and pears ar softened. sprinkle with chives...eat
