View Full Version : Cajun chicken with Penne

l-1/2 lb. chicken breasts, cut in strips
1/2 c. sliced green pepper
1/2 c. sliced red pepper
1/2 c. sliced mushrooms
1/2 c. chopped shallots
1/2" cubed tomato
1/4 c. olive oil
1 T. cajun seasoning
salt and pepper
1 box penne pasta
1 pint heavy cream
1/4 c. white wine

Heat pan and add olive oil. Mix chicken with cajun seasoning and add to hot olive oil. Cook until browned. Deglaze pan with wine. Add peppers, mushrooms, tomato and shallots. Saute until tender. Add penne, salt and pepper. Toss until mixed. Add heavy cream and 2 T. cajun seasoning. Cook until thickened.

This recipe looks like a dish I've had at O'Charley's, minus the Andouille sausage.
I will definitely be trying it out...thank you for sharing!

This is one of my favorite dishes at a lot of different places. I have used different sausages at times. TGIF's used to have one that had chicken and sausage, or chicken and shrimp which was really good. I add whatever I have handy! lol Enjoy!

very nice recipe but you forgot the last ingredient of the holy trinity if you want it to be cajun....lol

Sounds wonderful. I love a wine/cream sauce with chicken.
But I'll have to replace the peppers with something.
I like them, they don't like me! (burp!Oh, excuse me!)
