Don't know where I got this recipe, but it was in my files.

I'm thinking that this is my Superbowl dinner this year.

GO CARDINALS!!!

Arizona Beans and Beef

1 lb pinto beans (about 2 1/2 cups), rinsed, picked over
2 10 oz cans beef broth
2 1/2 cups water
5 1/2 oz can tomato paste
1 lb lean stew beef, cut into 1-inch cubes
1/4 lb salt pork, diced
1 medium onion, chopped
2 cloves garlic, minced
1 Tbs chili powder
1 tsp cumin seeds
1/2 tsp dried thyme
1/2 tsp red pepper flakes
Salt and pepper

Place all ingredients in slow cooker; cover and cook on low setting 12 hours or until beans are tender. Season to taste with salt and pepper. Makes 8 to 10 servings

Sorry, Sush - I just saw your question, thanks to lifesaver's bumping.

Using low sodium broth is a good idea, especially if you're adding the salt pork.
