It's for Oklahoma cattle, but should apply to cattle from other states too! :tiphat:

Found a better resolution version of the chart for download.

It's on the Utah Education Network site (http://www.uen.org/Lessonplan/preview.cgi?LPid=5365), as part of a Meat Lecture.

Scroll down, it's titled "Retail Cuts of Beef". download the jpg, the pdf is messed up.

There's a lot of other stuff there to look through.
