Free range chicken in Parma ham with Mushrooms

Serves 2
Prep Time 10mins
Cooking Time 30 mins
Ingredients
2 Free range chicken breasts
4 Rashers Parma ham
6oz/170g Mushrooms (thinly sliced)
2 tsp Whole grain mustard
2 tsp Extra virgin olive oil
Salt and freshly ground black pepper
Method
Use enough aluminium foil to create a parcel for each chicken breast
Spread 1 tsp of extra virgin olive oil on each piece of foil
Lay 2 rashers of parma ham side by side on each piece of foil
Spread 1 tsp whole grain mustard over the parma ham
Lay the chicken breast on top of the ham, cover with mushrooms and season with salt and freshly ground black pepper
Fold the foil over the top to form a parcel and seal
Place in a pre heated oven 220°C/425 °F/gas mark 7 for 20 minutes, open the parcel and cook for a further 10 minutes
