Chickie Sammies
6 cups of chopped, cooked chicken
1/4 TBL butter
1/4 c. chopped onion
1/3 c. flour
1 1/2 c. milk
2 tsp. salt
1/2 tsp. black pepper
3 eggs
oil for frying
sandwich-sized English muffins
1 large tomato, thinly sliced
Brown the onion in butter and stir in the flour, salt, and pepper. Pour in the milk and cook until bubbly.
Remove from heat;
Mix with the chopped chicken in a shallow bowl.
Cover store in refrigerator for two-four hours.
Remove from the refrigerator and shape into patties.
Beat the eggs and dip patties in the eggs. Chill for 15 minutes and fry in hot oil until golden brown.
Lightly toast the muffins;
Slather both sides of the muffins with mayonnaise; place patties on the muffin bottoms, add two or three slices of tomato, add th tops and dig in !
