Ahhh.....Asparagus, how do I love thee? Let me count the ways........

1) Simple: Steamed tender/crisp, with a bit of butter, salt, and pepper.

2) Grilled, drizzled with olive oil, salt, and pepper.

3) Blanched, then wrapped with proscuitto, and drizzled with Italian dressing (Good Seasons is the best for this).

There used to be a very fancy French restaurant in downtown Los Angeles called Francois'. Great place, very elegant, excellent food and service. Every spring they featured an asparagus menu -- soup to nuts, it was all based on asparagus (except dessert). Apparently that's quite common in France.

I like 2 the best, it's like (thought avoided/not even uttered) it's hard to beat. :yum::yum:

Steamed is good too, of course. I'm getting lazier as I get older & don't want to wrap things much any more. But I love to eat it. :chef:

We have some that will be roasted with other veggies tonight. Yummy!

Tried to grow some in the garden for a few years but...never got much. BUMMER

In risotto with other spring vegetables, like peas and leeks.

One more - tempura-battered and fried with dipping sauce made from mirin, soy sauce, ginger and green onions.

I also like it with white truffle oil drizzled on the asparagus but sesame also works well.

Everyone's said it.... GRILLLED or roasted OR GRILLED.... salt, pepper, olive oil....
+parmesan.

Did I say grilled?
