View Full Version : NCT's International Iron Chef II (everyone join!!)

Bam and I tried this in another post, the first International Iron Chef (http://www.netcookingtalk.com/forums/showthread.php?t=7768). The idea is to have an ingredient and then make your dish.
We want to try it this time with everyone. We need YOU to take the ingredient and cook it, then post pics.
The ingredient this time is pork. Any cut. From ribs, to butts, to chop. If it is pork, then show us what you’ve got.
Unlike a traditional Iron Chef, we aren’t looking for a “winner” here. Instead, we are looking for creative ideas on what to do with the theme ingredient.
The real winner will be NCT and all NCT members because we will have new ideas, new recipes, and new pics.
So, who’s game. The ingredient is Pork. We’re starting today Sunday, 5/17/09. All recipes should be posted with pics before midnight Saturday night, 5/23/09. You can post at any time, but please post before Saturday at midnight so we all have something to wake up to and browse on Sunday!
Again, this isn’t really a competition of sorts, but more of a way to challenge each and everyone of us to do something creative with the theme ingredient. It’s all for fun and for the benefit of NCT. But, I’ll personally Karma anyone that joins in!! :yum:
Once you have your recipe and pics, just post them to this thread. You might also consider making a separate thread just for your recipe so it’s easier to search on and find.
Or just make a separate thread and post the link here. It all works. Probably, the best approach is to start a new thread and post the link here!
So, shall we start NCT’s Battle Pork? Who’s in?

"Iron Chef". That's a pretty hefty term to label one's self.
How did this come about? Neat concept, but are us "lesser cooks" expected to compete against you or Bam because you are the "Iron Chef's" of NCT? Maybe I missed a post in the romper room...
Keltin

“Iron Chef” is the idea.
The show Iron Chef picks a random ingredient, and then everyone scrambles to make what they can of it. It will cause you to pull your best and savored recipes, or think long and hard about something new.
Either way, we all win!
So the idea here is, the ingredient is pork (this time) and what will YOU cook with it?

Oh, OK. When I saw this last night;
Iron Chef International
in the South kitchen..............Iron Chef International Keltin
in the North kitchen............. Iron Chef International Bam
All right! Kitchen Stadium welcomes the first challenger representing Southern Style Pit BBQ, aiming to take down Iron Chef Bam.
BBQ vs. BBQ .
Keltin vs Bam......This is going to be a great one.
We should be expecting a lot of the same techniques.
These two chefs show alot of similarities in the kitchen and on the grill.
This should be a fairly good match.
We are going to do it a little differently. Today is a one dish show.
Todays secret dish is...................... Smoked Chicken Lasagna
Doc, are you ready?

To be a little more clear. Bam and I decided to both make the same dish that he found and then post pics. Since we were both doing the same dish/ingredient, we called it Iron Chef.
The theme of Iron Chef is to have one ingredient, and everyone makes something of it. So we thought it would be fun to start an Iron Chef tradition here at NCT where an ingredient is picked, then everyone makes their dish from it.
It’s not really a competition. There is no judging or winner. It’s more of a challenge for everyone to say “hey, the ingredient is X and I can make this”, then post it with pics.
There are no “real” Iron Chefs. Iron Chef is just the theme in that we have an ingredient and everyone cooks it. That way, we get so many takes and interpretations of the theme ingredient.
It’s a fun way to challenge ourselves and also boost recipe and pic count for NCT!
Plus, it’s just cool. Instead of thinking what’s for dinner, now we think, how am I going to cook this???? Should be a blast. You’ve got a week to come up with something, so it should be fun!

Okay...you asked for a pork recipe right?
Here's mine... this joint costs under £5 why? because most British people turn their nose up 'cause it's called hand of pork...takes nearly 5 hours to cook, then you have to use tongs to pull out the meat...but it's the tastiest pork I've ever had....& the crackling is awesome!
Slowly Roasted Hand of Pork
http://www.cookingwiththejoneses.com/images-wp/2009/03/pork1.jpg
Serves 4
Prep Time 15 mins
Cooking Time 4hrs 45 mins
Ingredients
Hand of pork, on the bone (approx 4kg)
Salt and pepper
Method
Place the hand of pork on a clean surface and pat dry
Using a sharp knife, score the skin through to the fat, avoid cutting into the meat
Turn the joint over so that the skin is on a flat surface
Season the meat with salt and pepper, rub into the meat
Turn the joint back over, and rub a teaspoonful of salt into the skin
Put the joint into a roasting dish
Roast in a preheated oven (middle shelf) at 220°C/425°F/gas mark 7 for 30 minutes
After 30 minutes, check the meat, the skin should be starting to blister, if not put back for another 15 minutes
Remove the joint from the oven and cover with aluminium foil, sealing around the edge of the roasting dish
Lower the heat to 170°C/325°F/gas mark 3, cook for 3 hours, again on middle shelf
Remove joint from the oven, and discard foil
Spoon off fat, leaving 4 Tbsp for basting
Baste the meat and place back in the oven for 45minutes-1 hour, 170°C/325°F/gas mark 3
Skin should now be crisp
See Cook’s tips
Serve with apple sauce and gravy (http://www.cookingwiththejoneses.com/not-so-italian-recipes/side-dishes/gravy/) of your choice
Cook's tips
Don’t expect to carve the joint, just pull off the meat with kitchen tongs

The last time I had a pig roast, I staked the cooked pigs head in front of my house and let him sit sentry there for 2 weeks. He had such tiny little teeth..

i couldnt decide on one particular dish... so i fired up the smoker and made 4 meat dishes using 3 different kinds of pork.. these are all easy to make
heres goes:
Q'd pork loin - very simple, rubbed and smoked with apple wood
cooked until temp hit 145*(residual heat will take it the rest of the way.)
http://img33.imageshack.us/img33/2262/img0940.jpg
the next one is a 1/4 of a pork loin, butterflied, rolled up with some pork honey garlic sausage, wrapped in bacon. bacon is then wrapped around it then gently rubbed with rub.
http://img155.imageshack.us/img155/9589/img0922p.jpg
third on is a slightly smaller than a 1/4 piece of whole loin, again butterflied but just has the same sausage stuffed inside of it. again wrapped in bacon and rubbed.
the piece of meat to the right in the picture, is the leftover sausage, made into a roll, wrapped in leftover bacon and rubbed
http://img155.imageshack.us/img155/8812/img0921z.jpg
i will post a full write up in the Q section a little later on

Fryboy, I like the way you put the gravy under the chop. You can still see how well cooked the chop was.
Bamster, pork, honey, garlic sausage? God that sounds good. Do you make that?

Now that merits some thought... Especially for someone like me still stuck in the past... I print out all the recipes I like anyway. It would nbe nice to have them organized in book form. "The NCT TNT Cookbook". hmmm

Well this wasn't what I really intended on making, but I'm saving my special meal for DW's birthday tomorrow. Since this is not a contest, I'll post pics of that tomorrow.
Pork chops with rice and cream gravy, and asparagus with scallions sauteed in garlic butter...
http://img34.imageshack.us/img34/2451/img019213119919.jpg
2 Pork Chops
1.5 cup white rice
1 can condensed cream of chicken soup
1 cup chicken stock
1/2 cup milk
1/2 cup cream
salt and pepper to taste
Mix everything but the pork chops and pour into a 9x9 pan. Lay pork chops on top, and cover with foil. Bake at 350 for 1 hour. Uncover and bake another 15-20 min. Serve hot.

well i just happened to buy a huge bottle of SBR....
hmmmm giving me ideas... pork steaks smoked for a couple of hours(with of course my new rub applied)...brought in, put in a slow cooker or oven and simmered in SBR until tender...sound ok?
oh and i would have to make you my potato salad..people actually pay money once and awhile for mine..lol
you will have to make the peas & pearl onions.. never have made them and dont want to screw them up...
for dessert... i will take two or three of 2 the bite brownies, heat for a couple of seconds in the microwave, top with some ice cream, whipped cream, a drizzle of chocolate and sprinkled with chocolate shavings...top with a cherry...

Not sure if I'm too late....but I did cook the pizzas last night, still the 23rd!
While the pizza dough is rising, get the coals hot. It's a good idea to have a cool side to the grill. Oil a pizza screen, stretch the dough over the screen. An alternate method is to simply lay the dough right onto the grill, then flip it when it's firm enough, (with nice grill marks, too). At that point, you can add anything you like. In this instance, I used a crushed red pepper seasoned olive oil along with the arugula leaves. To that I added jullienned raw red pepper, black olive slices, oil cured sun dried tomatoes and fresh mozzarella. I topped that with slices of the sausage, fresh basil and grated parmesan.
