Sunday Sweet Potato Mash

2 lbs. sweet potatoes, peeled & diced
1/4 c. butter
1 TBL shallot, minced
1 clove garlic, finely minced
1 1/2 tsp. minced fresh thyme
1/4 c. Grand Marnier (optional)
1/4 c. orange juice
1/3 c.maple syrup
salt and pepper to taste

Bring a large pot of water to a boil. Add sweet potatoes and cook until tender, about 20 minutes.
Meanwhile, melt butter in medium saucepan over medium heat.
Add shallot and garlic; saute' 2 minutes.
Add thyme, Grand Marinier (if using), orange juice and maple syrup;
simmer 5 minutes.
Remove from heat.
Drain sweet potatoes and return them to pot. Mash while still hot, then add reserved liquids and mix well.
Season with salt and pepper to taste.

I made some similar last thankgiving using fresh oranges for the juice and the body of the orange as cups. I put then in the oven to finish them. Oh and I used a brandy in mine as well. Love sweet potatoes regardless of how they are made.
