Carrot Casserole

2 lb. carrots, cooked and mashed (I roast them)
8 oz. sharp cheddar cheese, shredded
salt and pepper to taste
2 T. butter
1 medium onion, grated
bread crumbs

Add cheese and onion to mashed carrots. Add salt, pepper and butter.
Place in 1 qt. buttered baking dish. Sprinkle with bread crumbs and dot with more butter.
Bake at 350 F for 35 minutes.
