Fried Lettuce Wedgies

1 large head lettuce
1 TBL cooking oil
2 cloves garlic, crushed
1/2 tsp dried pepper flakes
pinch of salt
1 TBL soy sauce

Wash and trim the lettuce and shake off excess water. Cut into quarters.
Heat the oil and fry the lettuce for 30-45 seconds on each flat side Add the crushed garlic, pepper flakes, salt and soy sauce; stir well and cook for another 30-45 seconds per flat side.
serve on individual salad plates, topped with boiled dressing if desired.

Boiled Dressing

1 tsp dry mustard
2 tsp sugar
1/2 tsp salt
2 TBL flour
1/8 TBL white pepper
1/2 c. cold water
2 egg yolks, beaten
3 TBL cider vinegar
3 TBL butter
3 TBL heavy cream

Sift first five ingredients into the top pan of a double boiler. Stirring slowly and constantly with the whisk, Slowly and steadily, pour in the cold water, stirring constantly, until smooth and well-blended.
Add the beaten egg yolks and the vinegar and place over boiling water in the bottom of the double boiler. Stir constantly and watch carefully - it thickens in a heart beat. Remove the dressing from the heat and beat in the butter.
Slowly beat in the cream till well combined
Refrigerate till needed.

I love Salad, and am always looking for variations. This sounds pretty good to me LT. I am going to try it next Sunday when Mrs SK returns from her out of town trip. I like to think a recipe is as good as the sum of its parts-and if thats the case, this sounds like a winner indeed!
