this is one of my Mom's recipes.
2 lb. cheddar, grated
1 tbsp Dijon mustard
1/2 tsp Tabasco
1/2 tsp fresh parsley, chopped
1/4 c pimento, finely chopped
1/2 c finely chopped pecans
Mix all ingredients except pecans. You can add more mustard and/or Tabasco to taste. Shape into log and roll in pecans.
