This is what I make when I can steal a can of lager from the fridge!
Asparagus in lager batter with a lemon dip
Prep Time 5 mins
Cooking Time 7 mins
Ingredients
- 10 Fresh asparagus spears, washed, trimmed and cut into 2”/50mm lengths
- 4 oz/120g Self Raising flour, sieved
- 5-6fl oz/150-180ml Cold lager
- Olive oil for frying ( See Cook’s tips)
- ½ tsp Dried thyme
- Zest of 1 lemon
- ½ Tsp Lemon juice
- 120 ml Mayonnaise
- Salt and freshly ground pepper
- Prepare the batter by mixing the cold lager and flour together
- Heat the olive oil in a large wok
- Dip the asparagus into the batter to coat and transfer to wok
- Fry for 5-6 minutes, turning over after 3-4 minutes to cook evenly
- Make the dip by mixing the mayonnaise, thyme, lemon juice and zest together
- Season to taste
- Chill in refrigerator for 20 minutes
- I used approx 200ml
