2 lbs new potatoes, peeled if desired (I don't)
1 cup real mayonnaise
1/2 cup grated Parmesan cheese
1/2 cup finely chopped red onion
Instructions:
1. In 4-quart saucepot, cover potatoes with water. Bring to a boil over high heat. Reduce heat to low and simmer 15 minutes or until potatoes are tender; drain. Return potatoes to saucepot; mash. Add remaining ingredients.
Season with salt and ground black pepper.
