Garlic Mushroom Appy

1 cup chopped onion
1/2 cup vegetable oil
3 T. butter
2 lbs. fresh mushrooms, sliced
1 can crushed tomatoes in puree, undrained
1 tsp. salt
1/4 tsp. pepper
1/2 cup red wine vinegar
1 cup chopped fresh parsley
3 cloves garlic, minced
Loaf of French bread

In a large saucepan, saute onion in oil and butter until tender. Add mushrooms, cook until tender. Add the tomatoes, salt and pepper; cover and simmer for 20-30 minutes.

Stir in the vinegar, parsley and garlic. Cover and simmer for 10 minutes. Let cool and refrigerate for a few hours or overnight.

To serve, spoon onto slices of French bread.
