TUNA STUFFED POTATOES
Serves: 8


8 large Baking potatoes
2 tablespoons margerine
2 (7 oz.) cans Tuna, drained
3 TBL Onion, grated
1 TBL Parsley, Chopped
1 can Cheddar cheese soup, undiluted
2 dashes Tabasco sauce
1/4 tsp. Salt
1/2 tsp. Paprika, divided
4 slices American cheese, halved

Preheat oven to 400F...
Scrub potatoes (do not peel) and rub skins all over with margerine. Prick randomly with fork. Bake in middle of oven for 1 1/2 hrs. or until tender.
Combine next 5 ingredients with half the paprika; mix well, breaking up the tuna clumps completely.
Lop off a 1" slice from top of each potato. Scoop out inside of potatoes, without damaging the shell. Add potato meat to tuna mixture, tossing to mix well. Spoon lightly back into potato shells, mounding high. Top
each with 1/2 slice of cheese. Sprinkle evenly with remaining paprika, and Return to oven just until cheese melts.

Mmmmmm. Good. I might cook up some fresh tuna and use that. Thanks for the recipe.
