Baked Potato Skins

baked some potatoes and made mashed potatoes out of the insides. kept the skins to make this....

8-10 potatoes(16-20 skins)
1/4 cup olive oil
1/4 tsp oregano
1/4 tsp thyme
1/2 tsp black pepper
1/4 tsp salt
cheese - shredded (your choice what kind)
salsa
sour cream
1 green onion - sliced thinly

preheat oven to 450*F

while oven is preheating, mix all the ingredients together except the potato skins.take a brush and brush the inside and outside of the skins with the oil mixture.

lay the potatoes skin side up on a cookie sheet.bake for 8 minutes after 8 minutes, turn skins over and cook for another 8 minutes.

when skins are cooked, put cheese on them. return to oven and cook until cheese is melt.

garnish with salsa,sour and green onion. you can also had crumbled bacon to the mixture

Hey, these look familiar, as does your comment "you CAN add crumbled bacon ...". Seems to me that I replied before that bacon is NOT optional! :biggrin:

A couple of those and a tossed salad would be a favorite meal for me!

Very cool, If I were to put your salsa in a dish of mine , How much do I put in?


Probably a teaspoon? Or will that even be too much?

mine just looks like a salsa...thats as far as it goes..lol

it is just a really thick hot sauce..lol

i put a teaspoon of the red stuff in a pound of shrimp while cooking and i was sweating
