this is one of my new favorite soups. we made it tonight and it is a big hit in our house.
this is how we made our chicken broth (http://www.netcookingtalk.com/forums/showthread.php?t=6090) - we used the liquid leftover from cooking our Easy Chicken Enchiladas, let it sit in the fridge over night and skimmed off the fat, then strained it.
to this you will need to add in a large pot:
3 medium yellow potatoes - skin left on and cut into large cubes
2 medium sized carrots - sliced
1 spring onion slice thinly for garnish
dollup of sour cream
bring the stock to a boil, add carrots & potatoes. simmer until the veggies are tender.
garnish with a dollup of sour cream and spring onions.
very simple to make and flavors are really complex.
without sour cream for DW
