Ingredients

  • 1/2 cup fat-free mayonnaise
  • 1 tablespoon minced onion
  • 1 lb unpeeled eggplant, sliced (about 12 1/2 inch slices)
  • 1/3 cup fine dry breadcrumb
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • vegetable oil cooking spray
Directions

    Combine first 2 ingredients, stir well.

    Spread evenly over both sides of eggplant slices.
  3. 3

    Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.

    Place eggplant on a baking sheet coated with cooking spray.
  5. 5

    Bake@ 425 degrees for 12 minutes.
  6. 6

    Turn eggplant over; and bake an additional 12 minutes or until golden.

Oven Fried Eggplant

1 medium eggplant (about 1lb.) cut and soaked in cold water
3 TBS Mayonnaise (recipe calls for low-fat type) ?
3 TBS water
6 TBS grated Parmesan cheese
¼ cup Italian-seasoned bread crumbs
Slice Eggplant into ½ inch or a little smaller, soak slices in cold water to cover 15-20 minutes. drain and blot dry.
Fork-blend mayonnaise and 3 TBS water until smooth. Dip Eggplant slices on both sides into mayonnaise mixture; press lightly into cheese, then into bread crumbs. Lightly coating both sides.
Spray shallow nonstick baking pan with cooking spray. Arrange Eggplant in a single layer in pan.
Bake in preheated 475°f oven 5 minutes. Turn slices over and bake 3 to 4 minutes, or until Eggplant is golden and crisp on the outside, tender inside.

This is a terrific way to cook eggplant! Easy, crunchy on the outside, tender and creamy on the inside!

Served last night with cheese ravioli and Italian sausages.

Oven Fried Eggplant
This recipe appeared in "Cooking Light" magazine.
Lee’s note: I have adapted it a little.

SERVES 4
·fat-free or full-fat mayonnaise
·2 cloves minced garlic or shallot
·1 lb peeled eggplant, sliced into rounds(about 1/2 inch slices)
·1/2 cup fine dry breadcrumb
·1/3 cup grated parmesan cheese
·1 T dried Italian seasoning
·vegetable oil cooking spray

1. Spread mayo evenly over both sides of eggplant slices.
2. With a fork, combine breadcrumbs, garlic or shallot, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.
3. Place eggplant on a baking sheet coated with cooking spray.
4. Bake@ 425 degrees for 12 minutes.
5. Turn eggplant over; and bake an additional 12 minutes or until golden.

I can seriously do some damage on that eggplant. I would ask for that for a last meal. Nothing tastes like eggplant.

I probably haven’t made the sense I posted the recipe, but I think it’s about time to do again I do enjoy them also.
I remember my mother used to fry eggplant and I didn’t like it because it was greasy. There was a time that my grandparents lived with our family growing up in my mother had made fried egg plant, and my grandfather asked for the maple syrup. My mother replied to her father[my grandfather] why would you want maple syrup for your eggplant? He replied that he allways used maple syrup on his fried egg plant. I know he thought they were pancakes or corn cakes but he still went ahead and used maple syrup on his fried eggplant LOL stubborn old cuss. But I had to try it when he did and I have to say it wasn’t bad.
