Hi all
I've got to do both holidays at work this week - I'm doing an Easter meal on Tuesday and Passover on Wednesday.
I need an easy Passover dessert I can serve/offer. I don't believe I'll need more than 15 portions. It's got to be easy, please...I don't trust my cook to be able to handle anything any longer, and I'm already swamped for time. Please, make it something I can throw together quickly!!

We make a simple applesauce that my husband loves. It's just cut up apples, cooked. You can pimp it out with pears, ginger, wine, or cut up oranges, but you don't have to. We serve it with ground nuts on top.

Any egg white based cookie, like macaroons work well. Or... how about a cheese and fruit plate, maybe with some nuts?

I have already posted some Passover dessert recipes, Vera. However, any European torte that is flourless or has little flour can easily be converted.
This Tamar Ansh Chocolate Nut Bar (http://kosherfood.about.com/od/passoverdesserts/r/shehakol.htm) from her cookbook "A Taste Of Tradition: Pesach - Anything's Possible" looks pretty darn good VB!

However use kosher for Passover margarine and pareve rich whip for the icing.

my mom use to make a pineapple no bake cheesecake with a shredded wheat and something mixed in as a base for passover... i cant get ahold of her right now... but i found one using shreddred wheat

Ingredients
30g/1oz shredded wheat cereal, crushed
1 tbsp honey
2 tbsp melted chocolate
250g/9oz mascarpone
55g/2oz pistachios, crushed
100g/3½oz fresh raspberries
1 tbsp icing sugar
2 tbsp chocolate, grated
Method
1. Mix the shredded wheat, honey and melted chocolate together and press into the base of a 7.5cm/3in chefs' ring, on a dessert plate.
2. Chill for five minutes until set.
3. Mix the mascarpone, pistachios, fresh raspberries and icing sugar together in a mixing bowl. Crush the raspberries slightly with the back of the spoon as you mix.
4. Spoon this mixture into the chefs' ring, covering the chocolate base.
5. Use a blow torch briefly to heat the edge of the ring to loosen it and then remove.
6. Dust with grated chocolate to serve.

Bams, shredded wheat is not a food one can eat during Passover but it looks like an interesting idea for another time of year.

maybe she made it when we had the feast of unleavened bread before passover. but i think and i am not getting into religon here but i believe it depends on what your beliefs are as to what you can eat...

Speaking of cheesecake, I love a good ricotta cheese cake. You can find my recipe HERE (http://www.recipesonrails.com/recipes/show/509-italian-cheesecake). It calls for just a little flour, so I'm sure you could substitute cake meal. It also calls for baking powder which is available for Passover if you can find it.
